Quick answer

Materials turn pink in Unity when their shader does not work with the active render pipeline, most often after moving a project to URP or HDRP. Convert the materials with Window > Rendering > Render Pipeline Converter, or switch each material to a shader from the new pipeline, such as Universal Render Pipeline/Lit. Also confirm that a pipeline asset is assigned in Project Settings > Graphics.

How to fix it

Run the converter on the Built-in materials and check the result, since custom shaders are not converted and need to be rebuilt in Shader Graph or rewritten. If everything is pink right after a new project opens, check that the Default Render Pipeline asset and the pipeline asset in Quality settings point to the same pipeline you built your materials for. Particles and UI use their own shaders, so convert those too.
