Quick answer

Polypaint does not show in ZBrush when painting is not turned on or the model is not set to display it. Turn on Rgb in the Draw palette, or Mrgb, before you paint, and make sure Colorize is switched on in Tool > Polypaint so the model displays its colors. If the color still looks wrong, the material may be overriding it, so try a simple material such as Flat Color or the default one.

How to fix it

Check that Zadd is on, that the Rgb intensity is not zero and that the color picker is not set to white. Zbrush materials such as shiny or matcap ones affect how color looks, so judge polypaint with a flat or neutral material. Polypaint is stored per vertex, so low-poly meshes give blocky color, and a higher subdivision level or DynaMesh resolution gives smoother painting.
